About the Role:

We are delighted to be recruiting on behalf of a prestigious countryside hotel renowned for its picturesque setting and exceptional hospitality. As Sous Chef, you'll play a pivotal role in leading the kitchen team alongside the Head Chef, with a strong emphasis on high-volume Conference & Banqueting cateringparticularly weddings and special events.

This is an ideal opportunity for a talented and driven Sous Chef who thrives in a dynamic kitchen, is passionate about quality, and enjoys the creative challenge of delivering a wide variety of menus.

Key Responsibilities:
  • Support the Head Chef in managing daily kitchen operations across all outlets (banqueting, la carte, and functions).

  • Take the lead in wedding and large event catering, ensuring smooth execution and consistency across multiple service points.

  • Supervise, train, and motivate kitchen staff, ensuring high standards of food preparation, hygiene, and presentation.

  • Contribute to menu development with a focus on seasonal, locally sourced produce.

  • Assist with stock control, ordering, and kitchen administration.

  • Ensure strict adherence to food safety and health regulations.

The Ideal Candidate:
  • Proven experience as a Sous Chef in a high-volume, quality hotel or banqueting environment.

  • Extensive knowledge of C&B operations, especially weddings and events.

  • Strong leadership and organisational skills with the ability to thrive under pressure.

  • Passionate about delivering an exceptional guest experience through outstanding food.

  • Formal culinary qualifications (e.g., NVQ/SVQ Level 2 or 3 or equivalent) are preferred.
