Head Pastry Chef - Salary Up to £60,000

We are seeking an experienced and creative Head Pastry Chef to lead the pastry operations within a high-volume, luxury establishment in Mayfair, Central London. This role demands exceptional technical skill, strong leadership, and the ability to deliver consistently outstanding quality across a range of high-end desserts, afternoon teas, and large-scale production for multiple outlets or events.

You will oversee a talented team of pastry chefs and ensure that every item produced reflects the elegance, precision, and quality expected from one of Londons most prestigious culinary operations.

Key Responsibilities
  • Lead and manage the pastry and bakery team, ensuring smooth daily operations across production and service.

  • Design and implement innovative, seasonal menus aligned with the brands identity and customer expectations.

  • Oversee large-volume production for restaurants, afternoon teas, events, and retail offerings.

  • Maintain the highest standards of quality, presentation, and consistency across all pastry items.

  • Control costs, wastage, and stock management while maintaining profitability.

  • Ensure full compliance with food safety, hygiene, and allergen regulations.

  • Mentor, train, and develop junior pastry staff to foster a culture of excellence and creativity.

  • Collaborate closely with the Executive Chef, Events, and Operations teams to deliver seamless service.

Requirements
  • Proven experience as a Head Pastry Chef or Senior Pastry Sous Chef in a large-volume, luxury environment (hotel, banqueting, or high-end restaurant group).

  • Exceptional pastry and baking skills with a flair for innovation and fine presentation.

  • Strong leadership and organisational abilities with a hands-on management style.

  • In-depth understanding of production planning, costing, and food safety standards.

  • Excellent communication skills and ability to thrive under pressure.

  • Passion for creating world-class pastries and mentoring teams to achieve excellence.
