What is my role as Pastry Commis Chef in the 3 Michelin Star Pastry Team ?
The 3 Michelin Star Pastry Team has 4 pastry chefs and a baker that looks after the entirety of the 3 Michelin Star pastry offering.
From Pierre Gagnaire Grand Dessert to the a la carte extravagant Chocolate Souffle, and of course the petits fours developed for the 3 Michelin Star restaurant, the team creates and realises all Pastry items for the Lecture Room and Library.
Under the Guidance of Pierre Gagnaire, Pastry Executive Chef Damien Thibault and Lecture Room Pastry Sous Chef Weilu Wang are always pushing the standards of fine dining desserts.
The Pastry Commis Chef will participate in the mise en place and service of all, building their knowledge and refining their techniques to develop to a Demi Chef de Partie role. Consistency and excellence with focus and attention to details are a must in this role.
