Candidates should have:
- Passion for great food and working with premium produce
- Extensive experience in the UK or Overseas in busy, quality establishments at Sous Chef level
- A strong knowledge of Italian cuisine is preferred but not essential
- The ability to deliver fresh food to high standards and to work well under pressure.
- Leadership qualities and be able to motivate and train staff

It all began 22 years ago with the flagship Manicomio Chelsea opening on the renowned Duke of York Square , close to Sloane Square. Since then Manicomio City at St Pauls opened in 2008 and Canto Corvino at Spitalfields in 2015 .
