Kinoya Sushi is currently seeking an experienced Sushi Chef to join the production kitchen team for our sushi counter in Harrods Dining Hall. This is an excellent opportunity to work in a premium dining environment and be part of an award-winning, internationally recognised restaurant group.
You will be responsible for preparing high-quality sushi components and supporting daily service with precision, consistency, and attention to detail.
Key Responsibilities
- Prepare sushi and sushi-related items to a consistently high standard.
- Carry out fish preparation, knife work, rice preparation, and portion control.
- Produce mise en place efficiently to support service at the sushi counter.
- Ensure all food is prepared and stored in line with Food Safety and hygiene standards.
- Maintain cleanliness and organisation within the production kitchen.
- Work closely with senior chefs to ensure smooth service operations.
- Follow company recipes, specifications, and quality standards at all times.
- Minimum 23 years experience as a Sushi Chef or Commis Sushi Chef in a premium or high-volume kitchen.
- Strong knife skills and knowledge of sushi preparation techniques.
- Experience handling fresh fish and Japanese ingredients.
- Ability to work under pressure in a fast-paced environment.
- Good understanding of Food Safety, HACCP, and hygiene regulations.
