We are looking for an enthusiastic Sous Chef to join this countryside hotel near Colchester. With over 320 acres of surrounding parkland, an indoor pool and spa and two full 18 hole golf courses on site, they serve up international food with a fabulously British twist. With multiple food outlets on site and open every day of the week for A la Carte and buffet dining, our client needs a strong Sous Chef to support the growing brigade.

As Sous Chef, you will be expected to work closely with the brigade to ensure that every aspect of the service runs smoothly, you must have a good working knowledge of each section of the kitchen and have previous experience training junior chefs.

Ideally you will be at either Junior Sous Chef or Sous Chef level with good experience in a high volume quality kitchen. You must be flexible to work on all sections as required and have the ability to train junior chefs on each section. As Sous Chef you will work closely with the Head Chef. You must have good kitchen management skills and be committed to providing a high level of cuisine and service at all times.

The ideal Sous Chef will:

· Have a real passion for high level cuisine and fantastic food presentation. · Be able to work in a team, use your own initiative. Be innovative with concepts and ideas. · Have knowledge of menu completion, stock control and Rotas.
