The Role

A fantastic opportunity to join a premium care home providing care for 62 older people. The person appointed to this key role will be joining a dedicated and friendly team, who are responsible for first class home-made food. They are looking for someone with a genuine love for food and commitment to quality. Food is a vital part of their residents’ lives and this role is key to their quality of care. They have a top class, spacious kitchen, the best local ingredients and a very supportive team.

A key advantage of this role is the ability to deliver restaurant standard food with a more reasonable work life balance. The successful applicant will not be required to work later than 5pm, and alternate weekends. They operate with a very generous food budget and allow full autonomy of menu design as well as offering comprehensive training and continuous development.

Key Responsibilities

  • To be responsible for ensuring that high standards of hygiene and cleanliness are maintained throughout the kitchen and catering department to meet the required standards of practice prescribed by the Environment Health Agencies.
  • To manage and supervise the catering staff in their daily duties, ensuring compliance and understanding of their responsibilities to food hygiene, preparation and all aspects of health and safety requirements. Ensure all record keeping is up to date and correctly completed and maintained e.g. temperature controls and stock sheets in line with HACCP requirements.
  • To plan and provide menus in consultation with service users and the Home Manager ensuring that meal choices reflect the preferences of the service user, and which are with in pre-set budgets.
  • Plan events menus Christmas, Easter etc.
  • To plan and provide for specific dietary requirements.
  • To undertake the supervision and support of all kitchen staff, including performance reviews.
  • To manage the formulation of kitchen staff rota and plan in conjunction with the home manager to cover the event of sickness/absence and annual leave.
  • To assist the Home Manager in all audits/inspections relating to the catering department, including monitoring the ‘meal time experience’ of their service users with in the home.
  • Assist and actively take part in all regulatory inspections including Environmental Health and Care Quality Commission.
  • To regularly review with service users and manage the quality of food provided, including obtaining feedback, and monitoring and observing meal times throughout the day.
  • To deal sensitively and appropriately in line with the Home Policies and procedures when dealing with complaints.
  • You must make sure that you are adequately staffed, ultimately your responsibility.

Communication

  • Participate in Staff and resident meetings as and when required

Budgetary and Financial Control

  • Be aware of the need to manage and maintain budgets agreed by the Home Manager and Directors
  • Ensure all commodities used in and around the Home are sensibly conserved by all Staff Members e.g. monitor the usage of incontinence aids, wipes, dressing, electricity etc.
  • To manage deliveries, stock control and stock rotation, ensuring that stock ordered is consistent with planned menus and stored in appropriate areas.
  • To ensure that no unauthorised suppliers are used when ordering good and services
  • To work with the Home Manager in the setting of food and staff budgets.
  • To assist in the financial control of labour costs.

Training & Development

  • Responsible for the Recruitment, Induction, Learning and Development of new staff.
  • Support and supervise and instruct junior and new staff members in all aspects of their work in the catering department, giving help and guidance where appropriate.
  • You will be responsible for your team and that they are compliant with training and arranging updates.
  • Maintain professional knowledge and competence.
  • Attend mandatory training days/courses, on or off site, as and when required as per the company training policy and procedure.
  • Participate in relevant training to achieve required qualifications.
  • To assist in the formulation of policies and procedures as and when necessary.

Health and Safety

  • Report immediately to the Home Manager any illness of an infection nature or accident incurred by a client, colleague, self or another.
  • Understand, and ensure the implementation of, the Care Homes Health & Safety Policy, and Emergency and Fire Procedure.
  • Report to the Home Manager, or Maintenance Person, any faulty appliances, damaged furniture, equipment or any potential hazard.
  • Promote safe working practice in the Home.
  • To ensure that all equipment is in a good clean working order and organise any repairs/replacements as necessary in consultation with the Manager.
  • To conform to the Homes food hygiene policy and in particular, critical points/hazard analysis. Personal appearance/hygiene must be of an acceptable level; uniform provided must be worn. Hair covered/tied back, Sensible enclosed none slip shoes must be worn.
  • To maintain and check first aid equipment on a monthly basis within the catering department, and record and submit these checks to the Home Manager.
  • To manage and ensure that the storage of all cleaning materials conform to the homes COSHH Policy.

Skills and Qualifications

  • Chef: 4 years (preferred)
  • Licence/Certification: City & Guilds/NVQ/SVQ or equivalent (preferred)
