Millennium Gloucester Hotel London Kensington is seeking a Sous Chef who will be responsible for Chef de Parties, Sous chefs and to assist the Executive Head Chef with the smooth running of the kitchen ensuring that all the areas of the kitchen are maintained to the Hotel standard. To supervise and co-ordinate the Kitchen services with other hotel departments; deal with staff queries; solve any problem concerning the Kitchen.

The Sous Chef Key Responsibilities will include:

  • In the absence of the Executive Head Chef and Executive Sous Chef to check standard recipes for all dishes to ensure proper portion control, uniformity in taste and quality for approval of the Executive Head Chef.
  • To liase with the Back of House Manager to ensure that the high standards of cleanliness are maintained in all areas of the kitchen such as machinery, small equipment, floors and fridges.
  • With the Executive Head Chef, ensure training for all kitchen staff, including apprentices is carried out as required.
  • To establish job methods and supervise cooking standards on a regular basis, and correct if necessary, in order to maintain a high quality of food and service.
  • To check daily each section to ensure work has been carried out in the proper manner.

The Experience & Qualifications for Sous Chef:

  • Experience in similar role and 4*/5* hotel
  • Ability to lead and manage a team
  • Ability to take action on customer’s needs and opportunities, to exceed their expectations
  • Ability to look for solutions, keep focus on driving guest satisfaction.

The successful candidate will be:

  • Enthusiastic, self-motivated, proactive, resourceful with excellent attention to detail
  • Demonstrate excellent presentation, negotiation and communication skills with the customers and other hotel departments
  • Team worker
  • Ability to work under pressure in a fast pace environment
