Are you a skilled artisan baker with a passion for creating high-quality breads and pastries? Do you take pride in working independently to produce outstanding baked goods each night?
We're looking for an experienced Head Baker to lead the on-site baking operation at one of London's most vibrant lifestyle hotels.
The Role
As Head Baker, you will take full ownership of the baking production, preparing a variety of handcrafted pastries, viennoiserie, and artisan breads for the hotel's breakfast service and outlets.
Working independently, you'll ensure every item meets exceptional standards of quality, consistency, and presentation that reflect the property's premium culinary identity.
Key Responsibilities
Produce a full range of artisan baked goods including croissants, pain au chocolat, pain aux raisins, sourdough, baguettes, and rolls
Manage the entire night bake to ensure all products are ready for morning service
Maintain strict food safety, hygiene, and HACCP standards
Monitor ingredient stock levels and communicate with the culinary team
Keep all equipment and work areas clean, safe, and well-maintained
Collaborate with the Executive Chef on new product development, seasonal offerings, and menu ideas
About You
Minimum 10 years' professional baking experience, ideally within a hotel or high-end bakery
Expertise in laminated doughs, viennoiserie, and artisan bread-making
Confident working independently and autonomously overnight
Strong knowledge of fermentation, proofing, and baking techniques
Understanding of food safety and hygiene regulations (HACCP)
Highly self-motivated, reliable, and detail-oriented
A baking or culinary qualification is desirable but not essential
