Reports to:Head Chef / General Manager
Contract Type:Full-Time (flexible shifts, including evenings and weekends)

Role Purpose

As Sous Chef, you will support the Head Chef in leading the kitchen team and ensuring the smooth day-to-day running of all kitchen operations. You will assist in creating and delivering high-quality, seasonal menus, maintain exceptional food standards, and oversee kitchen organisation. In the absence of the Head Chef, you will take charge of the kitchen, ensuring consistency, compliance, and a positive working environment for the team.

Key Responsibilities

Kitchen Leadership

  • Support the Head Chef in motivating, managing, and developing the kitchen team.
  • Assist with rota planning, training, and performance management.
  • Lead shifts and supervise service to ensure food is prepared and presented to a consistently high standard.
  • Work collaboratively with Front of House management to ensure smooth and efficient service.

Food Production & Standards

  • Prepare, cook, and present dishes to the restaurants quality standards.
  • Ensure portion control, presentation, and consistency across all dishes.
  • Adapt recipes and menus to meet dietary requirements and special requests.
  • Accurately complete and maintain kitchen documentation (temperature checks, cleaning schedules, HACCP records).

Financial & Operational Management

  • Assist with stock management, ordering, and efficient stock rotation.
  • Help control food costs and minimise waste in line with GP targets.
  • Support the Head Chef with supplier management, ensuring quality and reliability.
  • Contribute to the preparation and service of special events, functions, and private dining.

Compliance & Safety

  • Uphold Food Safety, Health & Safety, and Environmental Health regulations at all times.
  • Support the Head Chef in maintaining a 5* food hygiene rating.
  • Ensure all kitchen team members follow correct procedures (allergen awareness, COSHH, manual handling).
  • Maintain high standards of cleanliness, organisation, and professionalism in all kitchen areas.
