I am working with a privately owned, high-quality pub-restaurant in the Finchampstead area, known for its warm, traditional atmosphere and commitment to simple, honest cooking done exceptionally well. Part of a small group of traditional gastros.
The venue has a loyal local following and a reputation for freshly prepared dishes, using the best seasonal produce and traditional cuts of meat. Their philosophy focuses on proper cooking sauces made from scratch, beautifully cooked joints and roasts, and genuine hospitality without unnecessary fuss.
They are now seeking a talented Chef de Partie who shares this approach to food someone who takes pride in their craft, has experience in fresh food kitchens, and enjoys working with traditional methods and ingredients.
The Role
As Chef de Partie, youll take charge of your own section within a well-structured, supportive kitchen brigade. Working closely with the Head Chef and Sous Chef, youll be responsible for preparation, cooking and service, ensuring every dish leaving your section meets the venues high standards for quality, presentation and flavour.
Youll be part of a team that values teamwork, consistency and calm professionalism someone whos reliable, steady under pressure, and genuinely enjoys being hands-on with fresh ingredients.
Key Responsibilities
- Prepare and cook dishes from scratch, using fresh, locally sourced produce.
- Work confidently with traditional cuts of meat, understanding preparation, cooking and resting techniques.
- Make sauces, reductions and accompaniments from scratch, ensuring depth of flavour and proper technique.
- Take full ownership of your station ensuring mise en place, quality checks and cleanliness are always maintained.
- Collaborate effectively with the kitchen team to ensure a smooth and efficient service.
- Adhere to all food hygiene, health & safety and allergen regulations.
- Assist with training or guiding junior staff when needed.
- Contribute ideas for specials or seasonal dishes that fit the venues honest, traditional style.
The Ideal Candidate
- Proven background in a fresh food kitchen ideally a quality pub, bistro or restaurant.
- Skilled in preparing and cooking fresh meat, sauces and classic dishes.
- Calm, reliable and organised, even during busy services.
- Genuine passion for good, honest food not gimmicks or shortcuts.
- Team player with good communication skills and a positive attitude.
- Strong awareness of food hygiene and kitchen safety standards.
- Flexibility to work evenings, weekends and bank holidays.
