Main duties and responsibilities:
Team
- Develop a close working relationship with all departments, colleagues and managers to ensure all guest expectations are met.
- Continually monitor all employee’s performance, providing additional coaching and development when required.
- Engage in continuous training with the team in order to provide and maintain world class service and knowledge.
- Organise and coordinate training delivery in conjunction with the restaurant manager through an organised structured programme of in-house initiatives.
- Work with the management team to increase average spends per head by implementing appropriate training and briefings.
- Assist other departments of the restaurant wherever possible and to understand the flexibility required when business levels fluctuate, to deliver the best possible service.
Guest
- Be present on the back of house bar and help in service if required.
- Interact with guests in a professional, friendly and confident manner.
- Ensure that exceptional standards of service are delivered consistently in order to exceed customer expectations, using standards and order of service documents.
- Ensure that you are aware of customer feedback both positive and negative and ensuring you take action and escalate where necessary.
- To be a focal point for our guests during service.
Brand
- Be aware of all promotions relating to the restaurant and Company and make suggestions where necessary.
- Understanding the importance of attention to detail.
- Assist in the drink’s development of Enoteca Turi for future menus, special events and promotions.
- Have extensive knowledge of all our product offerings including, spirits, wines and beers and engage with our guests providing personal recommendations.
- Keep on top of current trends and suggest new ideas to the General Manager which can improve our performance and competitive advantage.
Compliance
- Free pour to the minimum standard set by the company and in compliance with current legislation.
- Complete pour and spec tests.
- Know and use all cocktail specs including those unique to Enoteca Turi and all classic cocktails.
- Follow all set up and breakdown checklists ensuring they are completed to standard by the team.
- Make sure all deep clean duties are being completed to the best possible outcome.
- Report all maintenance faults, losses and breakages and ensure they are dealt with swiftly.
- Ensure you and your team follow the challenge 25 policy.
- Ensure all employees involved in the service of alcohol complete all appropriate licensing training.
- Ensure trail application is completed daily and within timed deadlines
- Communicate all issues relating to the business to the Assistant General Manager and the General Manager.
Finance
- Ensure effective stock rotation and maintain stock levels in accordance with business levels.
- Conduct weekly stocktakes ensuring the bar operates to the specified GP levels at all times.
- Monitor stock movements to ensure stock security.
- Ensure all bar purchases are met with budgetary constraints
- Ensure that billing and control of revenues are always maintained.
